Agaricus bitorquis is a robust, firm-fleshed agaric distinguished by its adaptation to compacted soils and warmer climates compared to its close relative, Agaricus bisporus. Morphologically, it is characterized by a thick, peronate (sheathing) veil that forms a distinctive double ring—a lower volva-like band and an upper skirt-like annulus—giving rise to the specific epithet 'bitorquis' (having two collars). The cap is smooth, white to off-white, often soiled with earth due to its hypogeous (underground) initiation, and can exert significant pressure, famously lifting pavement or asphalt as it expands.
Native: Europe, North America, Temperate Asia. Introduced: Australia, South America (urban zones). Widespread and cosmopolitan in temperate and Mediterranean climate zones.
