Pleurotus columbinus, often classified as Pleurotus ostreatus var. columbinus, is a distinct cool-weather variety of the common oyster mushroom known for its striking deep blue to steely-gray pigmentation in early development. While genetically similar to the Pearl Oyster, it is morphologically distinguished by its darker cap color, which is temperature-dependent; the blue hues are most vibrant in cold conditions (below 15°C) and fade to gray or tan as the mushroom matures or if grown in warmer environments. The species exhibits a shelf-like growth habit with decurrent gills running down a lateral or eccentric stem.
