Ustilago maydis is a pathogenic fungus that infects corn (maize), causing corn smut. The infected kernels swell into grayish-blue galls. In Mexican cuisine, these galls are considered a delicacy called huitlacoche. It has an earthy, slightly sweet flavor often compared to mushrooms or truffles.
