Matsutake, Pine Mushroom
Matsutake is an ectomycorrhizal Tricholoma prized in Japan for its spicy, cinnamon-like aroma. It fruits hidden in litter under pines, especially Pinus densiflora in Japan and Korea. Attempts to cultivate it have so far been unsuccessful.
A prized edible, central to Japanese autumn cuisine. It resembles at least one poisonous species, including the small brown-spored Inocybe pyriodora, so check the white spore print, firm flesh and spicy odor.
Never eat a wild mushroom based on a web page — confirm with an expert.
Mycology is an evolving science: names, classifications and safety information change as research advances. Entries are compiled from cited sources and reviewed, but may be incomplete or out of date — check the sources, and never rely on this library alone to identify or eat a mushroom.
