Lyophyllum shimeji (Kawam.) Hongo is the 'hon-shimeji' of Japan, a traditionally wild, ectomycorrhizal mushroom of pine and mixed forests that is famous for its flavor ('matsutake for aroma, shimeji for taste'). It forms dense clusters of grey-brown capped mushrooms with thick white stems. Japanese companies developed methods to fruit it on grain-based media without a host, and it is now sold commercially. Note that the common market 'shimeji' (bunashimeji) is a different species, Hypsizygus tessellatus.
Japan, Korea, China; also northern Europe (Scandinavia).
