Sparassis crispa (Wulfen) Fr. is the European cauliflower fungus, a large, cream to pale tan rosette of curled, flattened lobes at the base of pines and other conifers. It is a parasite and brown-rot decomposer of conifer roots and butts. It is a choice edible with a firm, noodle-like texture and is studied for its high beta-glucan content; much of the East Asian cultivated material sold as S. crispa is S. latifolia.
Europe, and in Asia records partly referable to S. latifolia; North American conifer collections are now mostly S. americana / S. radicata.
