Aspen Oyster
Pleurotus populinus O. Hilber & O.K. Mill. is a North American oyster mushroom that fruits on dead aspen and cottonwood (Populus). It closely resembles P. ostreatus and P. pulmonarius but is intersterile with them, typically has a whitish to pinkish-grey or pale tan cap, and produces a whitish spore print. It is most common in boreal and montane aspen forests from late spring to autumn.
Choice edible, prepared like other oysters. Cook thoroughly.
